Simple, Classic, Easy Crepes

Crepes sound very French, fussy and intimidating, but I promise they are not. They are essentially a very flat pancake with less ingredients. Trying to avoid processed foods, combined with the realties of farm life mean that I need fast meals sometimes and Crepes are quick and flexible. We love them savory, we love them sweet, the fillings are endless and the crepes are easy to make ahead. You can have sweet crepes at breakfast and make extras for savory crepes at dinner.

The key to success with crepes is having a good pan that you can lift and rotate easily. I also find it extremely helpful to have a bit of melted butter with a silicon brush to wipe down my pan. The pan I use is a well seasoned 9” round cast iron griddle.

Simple Classic Crepe with Whole Food  Ingrdients

Basic Crepe Ingredients

  • 1 Cup Flour

  • 1/2 Tsp Salt

  • 4 Eggs

  • 4 TBS Melted Butter

  • 2 Cups Whole Milk, as needed

  • 2 TBS Melted Butter, set aside for pan.


  • Whisk together salt and flour until smooth and lump free or alternately sift together.

  • Add fresh pasture raised eggs and whisk until completely smooth and incorporated.

  • Add slightly cooled, melted butter and whisk to incorporate.

  • Add milk whisking in a cup at a time until mixture is thin and easily pourable.

  • Heat a 9-10" round griddle, skillet, or crepe pan. I use a round well seasoned cast iron griddle pan. You must be able to pick it up and rotate it to evenly coat your batter.

  • Heat skillet to medium heat

  • Brush hot skillet with melted butter.

  • Lift off stove and pour 1/3 cup of batter onto skillet and immediately begin to rotate skillet so batter evenly coats all the way to the edges.

  • Return to heat and let cook until set, usually once edges begin to dry and slightly lift from pan.

  • Gently loosen and carefully flip to finish second side.

Plate, fill, and enjoy!
